Ingredients
• 300gm fine Burghul (cracked wheat) - soak in water for approx 20mins then squeeze out water
• Spanish onion to taste finely cut
• 10gm Italian Parsley finely chopped
• 20gm mint finely chopped
• 125ml virgin olive oil
• 125ml fresh lemon juice
• Sea salt and milled pepper
• 6 ripe Roma tomatoes diced
• 1 of each red and green capsicum diced
