Ingredients
• 1 tbsp olive oil
• 1 small onion chopped
• 2 cloves garlic chopped
• 1 bunch English spinach roughly chopped
• 1 cup Flannerys Own Certified Organic brown rice
• 2 1/2 cups chicken broth
• 1/4 cup parsley chopped
• 1/4 cup dill chopped
• Salt and pepper to taste
• 1 lemon juice and zest
• 1/4 cup feta crumbled (optional)
Preparation
• Heat the oil in a pan, add the onion and sauté until tender.
• Add the garlic and sauté until fragrant.
• Add the spinach and cook until it wilts.
• Add the rice, chicken stock, parsley, dill and season with salt and pepper and bring to a boil.
• Reduce the heat, cover and simmer until the rice is cooked, about 50 minutes.
• Hit with a splash lemon juice and zest to taste and garnish with feta before service
