Simple Quinoa and Vegetable Stir Fry

Ingredients

•2 - 3 cups Flannerys Own Certified Organic Quinoa (cooked)
•1 – 2 tablespoons Flannerys Own Certified Organic Coconut Oil
•1 stalk celery (washed, cut in thin pieces lengthwise, then sliced thin)
•1 small carrot (peeled, diced)
•1 onion (diced)
•1/2 teaspoon dry ginger
•1 teaspoon paprika
•1/2 teaspoon ground cumin
•1 teaspoon ground coriander
•1/2 teaspoon turmeric
•A pinch of cayenne
•1 tablespoon soy sauce
•1/4 cup Flannerys Own cashews pieces

Preparation

1.Heat Flannerys Own Certified Organic Coconut Oil on medium-low in a large shallow pan
2.Add diced onions and stir until they begin to soften.
3.Turn the heat to medium high
4.Add the carrots and celery, and cashews or sunflower seeds. Stir-fry for 5 minutes
5.Add the spices and stir-fry for 2 minutes, until mixed well and browned
6.Add the cooked quinoa and stir-fry for 5 minutes, until lump free, and mixed well with the veg & spices
7.Stir in the soy sauce, frozen peas, and 2 tablespoons of water, cover and steam for 5 minutes, or until the vegies are tender
8.Serve immediately warm, delicious!
