Ingredients
- 500gm fresh asparagus, trimmed
- Lettuce
- 1 cup fresh cooked prawns, halved lengthwise (for a great alternative add crabmeat)
- 2 hard-boiled eggs, halved
- About 12 cherry tomatoes, halved (1 cup)
- 1 small cucumber, peeled and sliced
Russian Dressing
- 1 cup mayonnaise
- 1/4 cup chilli sauce
- 1 tablespoon prepared horseradish
Preparation
Combine ingredients for Russian Dressing and let stand for flavours to combine. Blanch asparagus in boiling water for about 2 minutes until just tender; drain and cool. Line platter with lettuce. Place prawns or crab in the centre of the platter and arrange eggs, tomatoes, cucumber and asparagus around seafood. Serve topped with Russian Dressing.
