Raw Date and Hazelnut Truffles

Ingredients

1 cup Flannerys Certified Organic Raw Hazelnuts
1 cup Organic Medjool Dates, pitted and roughly chopped
1/2 cup Flannerys Own Certified Organic Cacao Powder
1 tsp cinnamon
2 – 4 tbs Flannerys Own Certified Organic Shredded Coconut
2 – 4 tbs Flannerys Own Certified Organic Cacao Powder, for coating

Preparation

  • Place hazelnuts in the bowl of a food processor fitted with a steel blade and process for 2 – 3 minutes until the hazelnuts are finely chopped. You want to retain some texture. Add dates, cinnamon and cacao powder and process again for 3 – 5 minutes until the mixture sticks together by itself. It will clump similar to the way dough clumps when it comes together.
  • Roll the mixture between your hands to form a ball. Set the truffles on a plate or tray until you’ve finished all of the balls.
  • Put the coconut on one plate and the cocoa powder on another. Coat the balls by rolling in either the coconut flakes or the cocoa powder. 
  • Place in the refrigerator or freezer to set.
