Minestrone Soup

Ingredients
- 250gm dried cannellini beans soaked overnight
- 2 litres vegetable or chicken stock
- 100ml olive oil
- 6 cloves garlic
- 200gm onion diced
- 200gm celery cut into small pieces
- 200gm carrot cut into small pieces
- 200gm zucchinicut into small pieces
- 200gm cabbage shredded
- 300gm potato cut into small pieces
- 300gm tomatoes
- 50-100gm tomato paste
- Riso pasta or broken spaghetti
- Basil, parsley and/or Pesto
Preparation
In a large hot pot saute onion then garlic in olive oil. Add carrot, celery, zucchini and cabbage. Add the potato. Cook 20 minutes, stirring occasionally to prevent sticking. Then add tomatoes, tomato paste and cannellini beans. Now add stock - simmer for 45 minutes to 1 hour. Add pasta, herbs and seasoning. Finish with pesto and serve with good crusty bread.
