Middle Eastern Rice

Ingredients
- 1 cup of Chickpeas, cooked
- 1 cup of brown lentils, cooked
- 2 cups of brown rice, cooked
- 2 medium red onions, diced
- 30gm each of fresh mint, coriander and Italian parsley, chopped
- 20gm ground cumin
- 20gm ground coriander
- 10gm cinnamon
- 50ml lemon juice
- 100ml virgin olive oil
Preparation
Soak chickpeas overnight, then strain and simmer until tender- approximately 25 minutes. Do the same for the lentils, but approximately half the cooking time. Boil the brown rice approximately 25 minutes until cooked. Fry onion until translucent, add spice powders, then stir in rice, lentils and chickpeas. Add chopped fresh herbs, olive oil and lemon juice. Season with good sea salt, ground white pepper and a sprinkle of cinnamon to taste.
