Ingredients
• 1 1/2 cups all-purpose flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/2 cup solid vegetable oil (shortening)
• 1 cup packed light brown sugar
• 1 large egg, lightly beaten
• 1/2 cup Flannerys Own Certified Organic Maple
Syrup
• 1 teaspoon vanilla extract
• 1/2 cup shredded coconut
• 1/2 cup chopped walnuts
Preparation
• Preheat oven to 190C. Line baking tray with baking paper.
• In a small bowl, whisk together flour, baking powder and salt. Set aside.
• In a large bowl, cream shortening and brown sugar until light and fluffy. Add egg, Maple Syrup and vanilla extract. Beat on medium speed until well-combined.
• Add flour, coconut and walnuts. Stir with a large fork just until combined.
• Scoop tablespoons of dough and place on prepared baking sheets 50mm apart. Bake 10 to 12 minutes until golden.
• Let cool 5 minutes and remove to racks to completely cool. Store in a covered container.
