Goji Berry Salad

Ingredients

• 1/2 cup Flannerys Own Certified Organic Goji Berries
• 1/2 cup wheat grains (available in Flannerys bulk section)
• 1 1/2 cups chicken broth/stock
• 1 tbsp extra-virgin olive oil
• 1 tbsp walnut oil
• 3 tbsp lemon juice (from one large lemon)
• 1 tbsp apple-cider vinegar
• 2 large shallots (white & green parts) thinly sliced
• 1 crisp red-skinned apple, unpeeled cut into small pieces
• 1 large celery stalk diced
• 1/2 cup walnuts toasted
• 1/2 cup finely minced Italian parsley leaves
• Pinch ground cinnamon
• 1 teaspoon Agave syrup
• Salt to taste

Preparation

• Combine broth and wheat in a saucepan and bring to boil over medium heat. Reduce heat to very low, cover and simmer 35 minutes, until most of the water has been absorbed and kernels are tender. Drain excess water.
• In medium serving bowl, whisk both oils, lemon juice and vinegar. Add drained wheat grains.
• Add all remaining ingredients to bowl, toss to coat. Season with salt to taste.
• Refrigerate, covered, until ready to serve. Serve cool or at room temperature.
