Goji Berry and Walnut Muffins

Ingredients
- 2 cups Flannerys Own Organic spelt flour
- 2/3 cup light brown sugar
- 1 tablespoon baking powder
- Pinch of nutmeg
- ½ cup of Flannerys Own Certified Organic goji berries (softened)
- ½ cup of walnut pieces
- 1 cup Barambah certified organic cream
- 120gms of melted unsalted butter (cooled)
- 2 extra large eggs
- 1 ½ teaspoons Equagold vanilla extract
Preparation
- To soften the Goji Berries, simply soak in a glass of water 30minutes previous.
- Preheat the oven to 200C degrees. Grease a 12 cup muffin pan or line with baking papers.
- Whisk together dry ingredients including flour, brown sugar, baking powder, salt and nutmeg ingredients in a large bowl. Set aside.
- In a medium bowl whisk together wet ingredients including Barambah certified organic cream, butter and eggs.
- Add the wet ingredients to dry and using a large spoon mix until blended well. (Do not over mix muffins, there will be lumps.)
- Gradually blend in the goji berries and walnuts to the mixture.
- Spoon the mixture among the muffin pan and bake for 15 minutes or until a toothpick inserted in the muffin comes out clean.
