Ingredients
- 3 cups carrots shredded
- 1 litre boiling water
- 1/2 medium hot fresh chilli seeded and minced
- 2 tbspn lime juice
- 1/2 tbspn maple syrup
- 2 tbspn roasted cashews roughly cut into pieces
- 1 tbspn fresh coriander chopped
Preparation
Place carrots in a colander, pour boiling water over them and drain well. Combine chilli, lime juice and maple syrup in a bowl and whisk with a fork. Add carrots, cashews, and coriander and toss to mix. Serve at room temperature or chilled.
