Buckwheat Pancakes with Caramelised Bananas

Ingredients
- 150gm Rice Flour
- 150gm Buckwheat Flour
- 30gm honey (optional for savoury)
- 30gm butter melted
- 15mg baking powder
- 1 egg beaten
- 300ml milk
- 1gm salt
- Squeeze of lemon juice
- 3-4 Ripe Bananas
- 30gm Maple syrup
- 150gm yoghurt
Preparation
In a large bowl sift flours with baking powder. Mix in egg, honey, melted butter and milk until smooth, stir through dry mixture to form a batter. Heat frying pan, add butter then on a high heat add batter, then turn down to cook through for approx 3 minutes then flip – cook until golden. Cut ripe Bananas diagonally and add to medium hot frying pan with remaining butter, caramelise then add maple syrup, spoon over pancakes and finish with a squeeze of lemon and Natural Yoghurt.
Notes/Tips/References
For savoury pancakes, omit honey. Instead of Banana, Maple syrup , lemon and yoghurt , use for example roasted Capsicum and Rocket, with Pesto or similar.
