Ingredients
- 250gm Sundried Pitted Dates
- 250gm Glace Pineapple
- 125gm Glace Apricots
- 125gm Green Glace Cherries
- 125gm Red Glace Cherries
- 250gm Wild Crafted Brazil Nuts
- 2 Organic Eggs
- 1/2 cup of Molasses Enriched Sugar lightly packed
- 1 tspn Natural Vanilla Essence
- 90gm Butter
- 1 tbspn Rum
- 1/4 cup Organic Plain Flour
- 1/4 cup Organic Wholemeal Self Raising Flour
- 1/4 tspn Salt
- 1 tbspn Rum for finishing
Preparation
Grease and line with greaseproof paper a 23cm x 12cm loaf tin Halve dates, chop pineapple and apricots into large pieces Leave cherries and brazil nuts whole Beat eggs until thick and creamy Add sugar, vanilla and 1 tbspn of rum and beat until sugar dissolves Add softened butter and beat until combined Stir in sifted flours and salt Add fruit and nuts and mix thoroughly Spread evenly into prepared tin and bake in slow oven (150° C) 1 1/2 to 2 hours (don’t overcook – insert skewer and if it comes out clean cake is cooked) When cooked, remove from oven, brush evenly with extra rum, cover with foil and leave to cool When cool, remove from tin and wrap in foil to store. Keep in the refrigerator. Will freeze well.
