Baked Crab Cakes

Crab cakes are versatile, simple and most of all delicious. Crab cakes compliment many side dishes or stand on their own as a meal. You can make them as simple as you please or mix in other ingredients such as spinach, hot spices, onions and other vegetables.


Baked Crab Cakes

Ingredients

• 500g lump crab meat
• 3/4 cup whole grain bread crumbs
• 1 tsp Worcestershire sauce
• 2 T lemon juice ( 1 lemon)
• 3/4 cup certified organic red capsicum, finely chopped
• 2 eggs lightly beaten
• 1 tablespoon greek yoghurt 
• pinch of cayenne pepper

Preparation

• Preheat oven to 230 degrees C.

• In a bowl combine all ingredients well.

• Roll into 7cm balls, flatten and place on a non-stick baking tray lined with a sheet of baking paper.

• Bake for 5minutes per side or until golden brown on both sides.
